Seriously, I’m really not. But I’m not too shabby at whipping up something delicious and healthy. And I like it to be fast you know? I’m not trying to spend all day in the kitchen making some gourmet breakfast; I’m not fancy. It needs to be quick especially when you’ve got a baby that wants to play with mom all the time. I’d rather spend my time playing than cooking. So, that being said, I wanted to share one of my favorite breakfasts that I invented one morning when I was rushing, but I needed something filling for a long day. This is my egg white and turkey sausage frittata! I’m an egg person, they’re so good for you and your brain, and also really filling. Even just the egg whites are the bomb! Especially if your looking for that low fat type of meal. This is what you need:
—> 3 egg whites and 1 egg (adjust this depending on how hungry you are of course)
—> 1/2 lean mean turkey sausage, or just plain old ground turkey
—> handful of fresh spinach
—> salt and pepper to taste
—> hot sauce (optional)
So for some reason I have a really small pan, and it works out perfectly with this amount of eggs and sausage. Keep the pan on a nice low heat Crack and separate your eggs into a bowl, whisk it up and add the salt and pepper. Add it to the greased omelette type pan on the stove. When the bottom starts to appear white, go ahead and add the cooked turkey and spread it about evenly. When the egg appears to be cooked almost to the top, add the shredded spinach and put a lid over it to cook the top the rest of the way. Serve it up on a plate and add some hot sauce if you’d like (so delicious). I like to eat my frittata accompanied with a nice bowl of oatmeal.
